Australian Purple is the garlic that made us fall in love with growing. It's a true hardneck — meaning it sends up a scape (flower stalk) in spring, which we snap off to redirect energy into the bulb. The result is large, well-formed cloves with a rich purple blush and a flavour that's unmistakably garlic.
Best used raw in dressings and salsas where its heat can shine, or roasted whole for a mellow, caramelised sweetness. Stores well for 4-6 months in a cool, dry spot.
